Eggplant Parmigiana

 Eggplant Parmigiana is one of my favorite dishes. I made it last night and here is the proof:

It takes about 30 minutes to bake and about 3 glasses of wine, prep time. (Actually, for me it is about a relaxed 30 minutes.)

You will need:
2 large-ish eggplants
olive oil - lots!
vegetable oil - if you are a cheapskate like me
tomato puree
mozzarella
parmesan
basil
oregano
salt
